The fire
Everything passes through the embers
We light the charcoal every morning and let it take its time. We do not cook over flames: we cook over mature embers, at the temperature each cut asks for.
Slow roasting and the grill define everything that leaves the kitchen. The produce arrives whole, is cut here and is respected: salt, fire and time. Nothing else.
Dry-aged beef
Galician beef aged in our own chamber. Cut daily and seared over oak charcoal.
Malpica fish market
Fish and shellfish come up from the Malpica market according to the auction of the day.
Seasonal vegetables
Produce from the surrounding farms, slow-roasted or finished on the grill at the end of service.

The setting
We are not just anywhere
Set in 38 hectares of unspoilt nature, our space combines the calm of the pine woods with versatile facilities devoted to the world of motor sport. Stone and corten steel come together to give the grill house a warm, intimate atmosphere.
Weddings and communions
A banquet in the stone hall or outdoors, with the pine forest all around and only one celebration a day.
Company gatherings
Working lunches, launches and conferences for up to 200 people, with private parking inside the estate.
